Asian seafood tacos with sesame lime coleslaw and spicy mayo


These were some breathtaking seafood tacos with grilled shrimp, mussels, squid and surimi in garlic and black bean sauce on a bed of sesame lime slaw. If we would start a food truck this is what we would serve. No but seriously, this is the best taco you’ll ever eat. So you wanna know how we made it?

We started by chopping up some red cabbage, mint and chili. We then sliced some green onions and carrot into ribbons. For the dressing, we mixed honey, rice vinegar, sesame oil, garlic, ginger, lime juice and lemon grass in a large bowl. We tossed the coleslaw veggie mixture in the dressing. For the spicy mayo topping, we mixed two tablespoons of mayonaise with a tablespoon of gochujang (fermented Korean chili paste) and a splash of lime juice.

As the coleslaw began to slightly pickle, we continued  by grilling the seafood in a grillpan with sesame oil and crushed garlic. In the last minute we added a tablespoon of Chinese fermented black bean sauce. This stuff really adds a punch of umami! Meanwhile we grilled our flour tortillas for about half a minute on each side, and the tacos were ready to be assembled.

The seafood pairs perfectly with the freshness of the sesame lime coleslaw, and the spicy mayo just ties it all together. You gotta try this! Or maybe one day we’ll get to serve this to you in our food truck. Who knows what the future holds…
