Grilled halloumi and pepper skewers with a broccoli & mint quinoa salad

Who knew healthy could look and taste this good? If you had told me a year ago I would eat and actually enjoy halloumi and a quinoa salad, I would have probably laughed in your face. However, things change and I have to admit that this quinoa salad is really delicious, as are those awesome looking halloumi and pepper skewers.

This meal comes together super easily and both the quinoa salad as well as the skewers can be eaten hot or cold. It would be great to bring either or both to a potluck! Read on to find out how to make this colorful plate of goodness.

You will need: 225 grams of halloumi (for 6-8 skewers), 50 grams of quinoa per person, one head of broccoli, 2-3 stalks of fresh chopped mint, one red bell pepper, one red onion, 2 tablespoons of olive oil, 1-2 tablespoons of lemon juice, one teaspoon of honey, salt and pepper

Quinoa salad
Start by rinsing the uncooked quinoa in a strainer with cold water to remove the bitterness. Then, add to a small pot of boiling water and cook for about 12 minutes. In another pan (or in the same one, even) boil the broccoli which you have cut into small pieces. In a medium sized bowl, mix together the olive oil, lemon juice, honey and season with salt and pepper. Toss in the quinoa and broccoli and finish off by adding the chopped mint. All done!

Halloumi skewers
Cut your halloumi into large squares. Slice the pepper into pieces of about the same size. Cut the red onion into large chunks. Skewer all three in your preferred order. Heat up a grill pan with a thin layer of olive oil and grill the skewers on both sides for about 2-3 minutes each.

This meal can be made from start to finish in about 20 minutes. The flavours and textures go together really well. And the best part of it all: it’s entirely guilt free without being boring! We hope you like it.
