The base of this dish consists only of a few ingredients, but you can add whatever you feel like. You could add extra veggies such as spinach or green beans, and quite possibly this would be great with some grilled chicken and/or bacon too. The possibilities are endless!
For the basic recipe (2 persons) you will need: 200 g of fresh pasta (tagliatelle works best), 100 g of feta, 125 g of creme fraiche OR greek yoghurt, 1 lemon (zest and juice), 5 stalks of mint, 200 g of peas (fresh or frozen), 1 clove of minced garlic, 1 chopped white onion, teaspoon of honey, olive oil, salt and pepper
Boil a pot of water and cook the pasta according to the instructions. When it is almost finished, you can add the peas for about two minutes to cook these too. Chop the block of feta into small cubes, place in a medium sized bowl and mash with a fork until little crumbs are left. Add the creme fraiche or greek yoghurt and mix well, then drizzle in about 2 tablespoons of olive oil. To the same bowl, add the finely chopped mint, honey, the zest of one lemon as well as the juice. In a small frying pan, heat up a tablespoon of olive oil and lightly fry the onions and garlic – then add to the feta sauce. Season with salt and pepper. Bring everything together by draining the pasta and peas, then stir in the sauce. There’s no need to heat the sauce since the hot pasta does the work for you!
Et voilà, you just made a wonderful meal in under twenty minutes and you used only two pans! We love this pasta since it’s so easy to make yet the result is always delicious – you can’t possibly mess this up. This pasta is also a great side dish, alongside a nice roast chicken, for example. It is also great for serving large groups or to bring to a potluck – since it’s about equally as delicious served cold.
