Sweet & spicy wings with broccoli hash browns

Hello, our name is Cheese and Chinese, and we’re addicted to chicken and carbs. There! We said it! Pheww, so happy we got that off our chest! Incase you didn’t already have your suspicions.. it’s really true. 100% of the time when we fantasize about food it’s either about chicken or carbs, but usually both. We know, its terrible, but what can we do? Ohhh wait a minute.. if we sneakily incorporate some broccoli in our carb,  we’ll totally be excused by the carb police. Well that’s one problem solved. ANYWAY, these pretty little things will make your day, and you should probably make these lovely carbs and wings for dinner tonight. The hash browns were perfectly crispy and the chicken wings were oh so juicy. All in all, it was a wonderful combination of textures and flavors.

Ingredients for the hash browns (for 2)
○ 2-3 shredded potatoes ○ 1 whisked egg ○ 2 tablespoons of flour ○ 1 clove of garlic, minced ○ half a broccoli ○ a small handful of chives ○ salt and pepper to taste 

Making the hash browns
Cook the broccoli and meanwhile press out all the liquid from the shredded potatoes (as much as possible). Finely chop the broccoli and add this to the shredded potatoes. Add the rest of the ingredients to the potatoes in a large bowl. Depending on how liquid-y your potato mixture is, you may need to add a little extra flour. Form the potato mixture into small, thin patties. Fry them in a thin layer of oil on medium to high heat for approximately three minutes on each side.

Ingredients for the chicken wings (for 2)
○ 500 gram of chicken wings ○ 4 tablespoons of honey ○ 4 tablespoons of sweet soy sauce ○ 1/4 cup of soy sauce ○ 2 tablespoons of sesame oil ○ 4 cloves of minced garlic ○ 1 tablespoon of minced ginger ○ 1 teaspoon of cayenne or 1 tablespoon of gochujang (Korean hot pepper paste) ○ 1 small handful of chives ○ salt and pepper to taste

Making the wings
Combine all the ingredients (except the wings) in a saucepan. Put this on a low heat to get all the flavors to fuse together. Take the saucepan off the heat and let the marinade cool slightly. Put some of the marinade aside and put the chicken wings into the remaining marinade. Let this marinade for about 2 hours. After 2 hours, take out the chicken of the marinade and fry these on a medium heat in a grill pan for about 10 minutes. Then pour the marinade that you kept aside over the chicken wings.

Grilling the chicken wings with the marinade will caramelize the skin and make it super crispy. And just in case it didn’t already have enough flavor, the extra marinade will just seal the deal. The hash browns were also perfectly crispy and the broccoli adds a nice twist. We know, its another cheat day meal but hey.. you won’t regret it!
