Confession: there was a time in my life that I would eat this avocado pasta every. single. day. I was living in California and the avocados were just too good to NOT eat every day. While I am very happy that Cheese and I now eat something different every day (#lifeofafoodblogger), the other day I was reunited with my good old love. And now you all can discover the wonders of the avocado pasta sauce! First of all, it’s super delicious. But it’s also healthy, yet creamy and rich. And the best of all: it’s budget friendly and probably the easiest pasta dish you will ever make!
Avocado pasta for two people
○ 1 large ripe avocado ○ 200 grams of pasta of your choice ○ juice of half a lemon ○ 1 minced garlic clove ○ 2 tablespoons of Greek yoghurt (or 1 tablespoon of mayonnaise also works) ○ 1 teaspoon honey ○ 1 teaspoon dried basil (optional) ○ 1/2 diced onion ○ couple of cherry tomatoes ○ diced cucumber ○ salt and pepper
Boil your pasta according to the instructions. In a small bowl, combine half of the mashed avocado with the yoghurt, lemon juice, garlic, honey and basil. Mix thoroughly and season with salt and pepper. Once the pasta is done, add it to the sauce (this warms it) and add in the rest of the ingredients. I like to add the rest of the avocado in cubes at this point, but you could also mash them into the sauce earlier. I’ve included red onion, cherry tomatoes and cucumber but the possibilities here are endless!
As I said, you could literally add anything to this pasta – I’ve made it with broccoli, salmon, mango, chicken (not in combination) and fresh basil is also a good idea! I love making this dish for an easy dinner, but since it also makes a great cold pasta salad it’s perfect for potlucks too. I’ve brought it to different potlucks and it’s always been a big hit!
