What’s better than a perfect chewy chocolate chip cookie for dessert? An ice cream sandwich from TWO perfect chewy chocolate chip cookies dipped in a crispy layer of chocolate! We’re pretty particular when it gets to our choco chip cookies.. they have to be just the right amount of chewy.. slightly crunchy on the outside, and there certainly shouldn’t be a single bite that doesn’t have at least two choco chips. We know.. we have a whole lot of criteria to fufill when we’re baking a batch, but after a couple tries we’ve nailed down the best recipe, which we filled with some lovely ice cream.
Ingredients for a batch of cookies
○ 1 cup of butter ○ 2 cups of light brown sugar ○ 2 eggs ○ 2 teaspoons of vanilla extract ○ 3 cups of flour ○ 1 teaspoon of baking soda ○ 2 teaspoons of warm water (to mix with the baking soda) ○ 1 pinch of salt ○ 2 ½ cups chocolate chunks (a couple choco bars chopped)
Baking the cookies
Preheat the oven to 175 degrees Celsius. In a bowl mix together the dry ingredients. In a separate bowl beat together the wet ingredients. Now stir together all of the ingredients. Using an ice cream scooper, drop large spoons full of the dough onto a greased baking tray. Bake the cookies for 10-12 minutes. They won’t look ready yet when you take them out of the oven, but they really shouldn’t bake for any longer than this if your aiming for chewy chocolate chip cookies! They will harden once they cool. It’s worth the wait, we promise!

○ 1 small chocolate bar (100gram) ○ 3 tablespoons of coconut oil
Making the choco dip
So this is the kind of choco dip that will harden instantly when it touches something frozen. So once you dip the ice cream sandwiches in the chocolate sauce it will quickly harden and you can quickly pop them back in the freezer, so that they don’t melt. This is the first time we made this dip and we were surprised that it didn’t have some crazy science behind it. It’s super easy to make! Or was it just us that was always fascinated by the choco dip that hardened instantly, once you poured it over your ice cream? Anyway, we slowly melted the chocolate in the microwave (just be careful that it doesn’t burn) and then stirred in the coconut oil.. and thats it!

○ 1 tub of ice cream ○ 1 large choco bar (200gram)
Making the ice cream sandwiches
So now you kind of gotta work quickly so that the ice cream doesn’t melt all too much. We thinly chopped up the choco bar and mixed this through the ice cream. Of course this step is totally optional, but why not? We then spread the ice cream thickly onto the cookies that had cooled down completely. We placed the second cookie on top and quickly dipped this in the chocolate dip, which had also just cooled down.We then wrapped these in cling film individually and placed them in a Tupperware box, which we put in the freezer.
Once you’re ready for dessert all you have to do is open the freezer.. and you will have the most heavenly dessert waiting for you. Yep.. be prepared for the dessert of your dreams!
