Happy frugal Friday everyone! From now on we’ll be posting a quick and easy budget friendly dish every other Friday! We’re gonna prove to you that frugal can still be divine. Today we present to you a recipe for a super delicious creamy sun-dried tomato pasta sauce, which we paired with some tagliatelle, roasted tomatoes and fried leek. And all of this for only € 2.99 per person! If that wasn’t great enough, wait until you hear that this recipe will take you 15 minutes max until you can sit down and dig in!
Recipe for two
○ 1 jar (295g) sun-dried tomatoes (€1.89) ○ 250g tagliatelle (€ 0.60) ○ one leek (€0.39) ○ 250 ml heavy cream (€ 0.69) ○ 200 g cherry tomatoes on a stem (€ 2.30) ○ 2 cloves of garlic (€ 0.10) Seasonings: ○ dried oregano ○ dried basil
Boil the tagliatelle according to the instructions. In the mean time, place the cherry tomatoes in a lightly oiled baking dish, season them with salt and pepper and place in a 200C oven for about 10 minutes until roasted. Chop the garlic, leek and sun-dried tomatoes. Heat up a small frying pan with some vegetable oil and fry garlic and then the leek for about 3-4 minutes. In a separate pan, throw in the sun-dried tomatoes and heavy cream, and season it with salt and pepper, oregano and basil. Then blend this together with an immersion blender until you have a smooth sauce. Once the tagliatelle is done, drain and stir in the sauce and the leek. Serve on two plates and place the roasted cherry tomatoes on top. Done!
Who knew something so delicious could be so budget-friendly? Also, this is quite possibly one of the easiest pasta sauces we have ever made. What really makes this dish though, are the roasted cherry tomatoes – not only do they look super nice, they are also bursting with flavor (literally!).
