Slowcooker Chicken Fajitas


Prepare yourself for one of the easiest, yet most delicious meals of your life. This dish is not only packed full of flavor, but it will also leave your house smelling like heaven for a good 12 hours… aka prepare for a feast. We’ve always thought that you can never really go wrong with fajitas, we’ve been making fajitas together for the past three years. We went through phases when we would be making fajitas on a weekly basis. Although we’ve been pretty loyal our old rather simplistic method over the past three years… after we tried out this slow-cooked version we know we’re never going back to our fajita past. The best part is that it requires little to no effort. We can pretty much simplify it into four easy steps.

Ingredients for four
○ 500g chicken thighs ○ 2 bell peppers, sliced ○ 2 onions, sliced ○ 1 chili, chopped ○ 2 cloves of garlic, chopped ○ 1 can diced tomatoes ○ 1 teaspoon cinnamon ○ 1 tablespoon cumin ○ 1 tablespoon oregano ○ 1 tablespoon smoked paprika powder ○ 1 tablespoon mild paprika power ○ a bunch of freshly chopped cilantro stems ○ salt and pepper to taste ○ 8 tortillas ○ 4 tablespoons sour cream ○ fresh salsa

Step 1. Turn on your slow cooker on low (total cooking time 10 hours) or on high if you don’t have as much time (total cooking time 6 hours). Ps. If you don’t have a slow cooker you could also of course use a Dutch oven and adjust the cooking time accordingly. Pretty please consider investing in a slow cooker! (it was our second best life decision ever!)

Step 2. Throw in all the ingredients into the slow cooker (except the tortillas, sour-cream and salsa of course.

Step. 3. Wait 6 or 10 hours, and be teased by the amazing smell. Watch the chicken slowly fall apart.

Step 4. Serve with the grilled tortillas, sour cream and salsa. Get ready for for some of the best fajitas ever and enjoy!!
