Sesame & Cucumber Noodle Salad

Summer is finally nearing and we are so excited! While we are big suckers for hearty comfort food, when it’s hot & sweaty outside you just need a fresh & easy meal to cool you down. This noodle salad is absolutely perfect for that! The cucumber is nice and cooling while the sesame dressing is creamy, yet has a zingy twist because of the lime juice. This cold noodle salad is great on its own as a light meal, or could be the perfect side dish at your next barbecue.

Serves 2 as a meal or 4 as a side dish
○ 400g rice or soba noodles ○ 1 cucumber ○2 tablespoons sesame paste (tahini) ○ 1 tablespoon all-natural peanut butter ○ 1 tablespoon sesame oil ○ 1 tablespoon coconut oil  ○ 1 tablespoon soy sauce ○ 1 tablespoon rice vinegar ○ 1 tablespoon honey ○ 1/2 tablespoon lime juice ○ 2 minced garlic cloves ○ 1/2 tablespoon grated ginger ○ 1 spring onion ○ black & white sesame seeds

Boil the rice noodles according to the instructions. In a separate small pot over medium heat, combine the sesame oil with the garlic and ginger. After about a minute, add in the sesame paste and peanut butter and stir until melted. Next, stir in the soy sauce, rice vinegar, honey and lime juice. Finally, add in the coconut oil to thin out the sauce and remove from the heat. Once the noodles are done, rinse them under cold water to stop the cooking process. Slice the cucumber into really thin slices and chop the spring onion. Combine the noodles, sauce, spring onion and cucumber in a large bowl and stir. I recommend refrigerating the noodle salad until it’s time to eat, because it is best served cold. When ready to serve, sprinkle with the sesame seeds and enjoy!
