We decided to take crêpes to a whole other level. We added not only cheese, but also crispy bacon, grilled asparagus and onions… and drizzled all of this with a lovely balsamico vinegar. These crêpes were incredibly delicious. They were like no other.
Ingredients for 10 pancakes
○ 250g flour ○ 2 eggs ○ 500ml milk ○ balsamico vinegar ○ butter for frying the pancakes ○ 200g bacon ○ 150g grated gouda cheese ○ 1 onion ○ 200g green asparagus
Mix the flour, eggs and milk in a bowl. Fry the bacon until it is slightly crispy. Remove it from the pan and set aside. Grill the onions and asparagus in a grill pan. Now Add the butter to a separate pan, and wait till the pan gets really hot. Then add a scoop of the batter to the pan. Add the bacon and a small handful of cheese. Once the other side starts to brown, flip the crêpe. Add more cheese on this side. Repeat this for all crêpes. Once you’re done, roll the asparagus and onion in the crêpe. Drizzle it with some balsamico.. and there you go.. your life is complete!
