One of my all time favorite salads is this one over here. Nothing beats the time-honored combination of sweet melon and salty ham: throw it together in a salad and add some cheese (as always) and I’ll be one very happy girl. In summer, this is one of my favorite lunches. However, this salad is also perfect for dinner as it takes very little effort (and no heat) to prepare and can be filling enough for a light dinner. Try this and thank me later!
Salad for three (lunch) or two (dinner)
○ 1 large honeydew melon ○ 100g prosciutto crudo ○ 250g camembert ○ 150g salad leaves of your choice ○ 2 tablespoons olive oil ○ 2-3 tablespoons balsamic vinegar
Slice your honeydew melon in half. Remove the seeds with a spoon, then scour the flesh with a knife into cubeshapes and spoon out the flesh. Cut your camembert into small cubes. Tear the prosciutto slices in half. In a large bowl, throw in all ingredients and add the olive oil and balsamic vinegar then season with salt and pepper. Toss everything and serve immediately!
